8 qt Instapot or similar pressure cooker
Ladle
Frying Pan with lid

1 lb Great Northern beans cleaned
1 Large Onion diced
3 – 4 Large mushrooms halved and thinly sliced
1 tbsp Cumin
1 tbsp Coriander
1 tbsp Chipotle Pepper finely ground
2 tbsp Garlic Powder
1 tsp Black Pepper ground
1 tsp Salt or Salt to taste
3 qt of Filtered Water Chlorine free
1/3 Cup of Sea Salt
1 1/2 lbs of Chicken Thighs skinned and deboned or spicy Chicken Sausages
4 tbsp of Sour Cream
2 tbsp of Arrow Root powder
Bring 1 3/4 cups of water to a boil in a two-cup Pyrex measuring cup. Add 1/3 cup of sea salt to water and mix.
Pour salted-water into a bowl with the 1 lbs of Great Northern beans. Cover beans with about 3 inches of water and soak for 24 hours.
After 24 hours, rinse beans thoroughly .*
In an Instapot, add 3 quarts of filter chlorine-free water.
Add all spices and herbs to the water in the Instapot and mix thoroughly.
Add Great Northern beans
Add Chicken Thighs debone and skinned
Add Onions and Mushrooms – to increase the flavor, cook Onions and Mushrooms together in a separate pan. Add Onions and Mushrooms after Sour Cream and Arrow Root.
Seal Instapot and cook on High Pressure for 8 minutes. Rest for 15 minutes after cooking to release pressure.
Ladle 2 to 3 cups of broth into a mixing bowl and add 4 tbsp of Sour Cream and mixed completely with a blending stick.
Add Sour Cream to soup and gently mix.
Mix 2 tbsp of Arrow Root powder with 1/2 cup of filtered water in a sealable container. Shake until blended.
Add Arrow Root mixture to the soup and mix in gently.
Let soup steep for 20 minutes, so everything blends.

*You can soak the beans longer than (2) days in the refrigerator if so desired.
